Feeling less than fabulous… on a wet rainy day… nursing a silly throat infection… I was pushed by my friend into this spacious room with the most unusual bar… counter… constructed of white tiles, with the most amazing machines on top… which has been described as… “a Haussmanian Paris apartment with a laboratory”… but in contrast to the apt description is the fact that one also feels very “homey“… and at home… in the friendly “bonhomie” atmosphere.
My friend did me good… I immediately felt better… a lot.
The Coutume… once the home of a kebab take-out… has been enticingly transformed into a modern contemporary coffee house… every coffee lover‘s… dream.
Antoine Netien… co-founder and master “torréfacteur“… “roaster”… who’s just been named as one of the “lauréats” in the “2ème Concours du Meilleur Torréfacteur de France 2011“… or the “Best Roaster in France” competition… by the Comité Français du Café… uses beans that are lovingly roasted in the large roaster displayed… prepared using four different methods…
Tom Clark… the friendly Brit is co-founder… who is more than happy to explain the various methods… via espresso machine… siphon, conical drip, and through a unique cold-drip apparatus…
Kevin Ayers… an American in Paris… and head barista… who moved specifically from the US to work at Coutume… illustrates Coutume Café’s seriousness about providing expertise and excellence in their field… These people are clearly passionate about producing the best cup of coffee in Paris.
Coutume… is a refreshing and engaging new open “American Style“… roastery and café… which allows you to see everything that is happening around you…

Perched high… on very comfortable high chairs… and the incredibly and innovatively designed bar… sipping our delectable coffee with the lovely enticing “viennoisserie“… tempting us to devour them… we felt a tremendous warmth and liking for this very special café…
